The history of DON ULPIANO dates back 20 years and as such it follows a rich family tradition. These traditional artesan methods are respected whilst being accompanied by modernisation and current production systems. This has enabled us to become specialists in the manufacturing of the widest range of Iberian products. In memory of our family heritage we take our name from the grandfather of the business “Don Ulpiano”.
 
Situated in the province of Salamanca, the birthplace of Iberian Ham, “jamón ibérico”, the source of our work begins with our cattle breeding. Within an extensive regime of large meadows our pigs roam freely, grazing on pasture and grain whilst undergoing rigorous health inspections. When they reach an appropriate age they are moved to our breeding grounds in the province of Badajoz where they stay until they reach an ideal weight for slaughter; the effort that takes the animal to fully satisfy its appetite with acorns, roots and grasses ensures that fat infiltrates muscle and this provides a source of the supreme quality associated with DON ULPIANO products.
 
Once slaughtered the lengthy artesan process begins. The expertise of our charcuterie producers, together with the strict control of supplier approval in regards to the raw materials used, ensures that genuine DON ULPIANO products are a gastronomic treasure to behold.
 
Iberian products make up some of the most highly regarded “deli” in the world and our desire to adapt to new market needs has ensured that we offer a vast assortment of different cuts (whole, pitted, sliced…)

DON ULPIANO PLATINUM HAM

Handmade and produced in Salamanca. Sourced from the hindquarters of the Iberian pig, fed exclusively on acorns and natural pastures. With a minimum curing of 36 months it is characterised by its intense flavours and aromas.
JAMON DON ULPIANO PLATINO is the embodiment of quality representative of all our products.

 

DON ULPIANO SILVER HAM

Handmade and produced in Salamanca. It comes from free-range pigs whose diet consists of entirely natural feed. With a minimum curing of 28 months, it is characterised by its incomparable flavour and smoothness. A slight sweetness ensures that JAMON DON ULPIANO PLATA is appreciated by the most discerning of palates.

 

DON ULPIANO PLATINUM PALETTE

Handmade and produced in Salamanca. Although smaller, it shares many characteristics with our ham. Its internal structure, made up of a fan-shaped bone, provides a slightly different but equally intense set of flavours and aromas.

 

DON ULPIANO SILVER PALETTE

With a curing process that can range from 20-30 months this meat has an intense aroma and the infiltration of fat within the lean meat provides a spectacular flavour, characteristic of the quality associated with DON ULPIANO throughout the production cycle..

 

DON ULPIANO PLATINUM/SILVER IBERIAN CURED LOIN

Made from one of the best parts of the Iberian pig. Renowned among restaurateurs and lovers of great food it is characterised by the infiltration of fat within muscle leading to its special and distinct flavour. DON ULPIANO loin has platinum silver ranges and is one of our star products.

 

DON ULPIANO IBERIAN CURED LOIN-LOMITO

The Iberian loin is quite possibly one of the juiciest and most sought after parts of the Iberian pig. Its streaky meat and seasoning made from natural products give you an intense and juicy flavour that produces a subtle sensation in the palate. With a marinating process followed by an entirely handmade artesan stuffing, its curing process can take up to 4 months to cure.

 

DON ULPIANO IBERIAN MORCÓN

It is made from top quality lean meat from Iberian pigs and is characterised by its intense aroma and flavour, primarily derived from its marinade flavoured with natural spices. Its unusual name comes from the intestines which are filled with mince meat, known as “blind” or “haggis”. Its slow curing process ensures intense flavours and very subtle hints.

 

DON ULPIANO IBERIAN CHORIZO

Traditionally, among the vast range of products the Iberian pig gives us it is perhaps Chorizo that is the most popular. It is produced via a traditional process where the finest and leanest cuts are combined with the most recognizable spices and stuffed creating DON ULPIANO IBERIAN CHORIZO, the best of cold meats.

 

CHORIZO IBÉRICO DON ULPIANO HERRADURA o VELA

It’s made with the same ingredients and seasonings as the chorizo. Made by stuffing the intestine, it may be straight or curved in shape. It’s smaller and thinner in size yet offers a wonderful balance of flavour and texture in the mouth.

 

DON ULPIANO IBERIAN SALAMI

Is prepared with a small selection of low-fat and flavored natural spices, giving it a subtle aroma. Its distinctive flavour makes it one of the most popular sausages.

 

IBERIAN SALAMI DON ULPIANO HERRADURA o VELA

Itis made with the same ingredients and seasonings as the salchichón (salami). Made by stuffing the intestine, it may be straight or curved in shape. It’s smaller and thinner in size yet offers a wonderful balance of flavour and texture in the mouth.
