The history of DON ULPIANO dates back 20 years and as such it follows a rich family tradition. These traditional artesan methods are respected whilst being accompanied by modernisation and current production systems. This has enabled us to become specialists in the manufacturing of the widest range of Iberian products. In memory of our family heritage we take our name from the grandfather of the business “Don Ulpiano”.
Situated in the province of Salamanca, the birthplace of Iberian Ham, “jamón ibérico”, the source of our work begins with our cattle breeding. Within an extensive regime of large meadows our pigs roam freely, grazing on pasture and grain whilst undergoing rigorous health inspections. When they reach an appropriate age they are moved to our breeding grounds in the province of Badajoz where they stay until they reach an ideal weight for slaughter; the effort that takes the animal to fully satisfy its appetite with acorns, roots and grasses ensures that fat infiltrates muscle and this provides a source of the supreme quality associated with DON ULPIANO products.
Once slaughtered the lengthy artesan process begins. The expertise of our charcuterie producers, together with the strict control of supplier approval in regards to the raw materials used, ensures that genuine DON ULPIANO products are a gastronomic treasure to behold.
Iberian products make up some of the most highly regarded “deli” in the world and our desire to adapt to new market needs has ensured that we offer a vast assortment of different cuts (whole, pitted, sliced…)
